A fan distributes warm air over the food in convection ovens, speeding up the cooking process. And because leftovers don’t often reheat well in the microwave, I was curious if convection ovens could be utilized to reheat food.
I decided to do some research and the following is what I found:
Both countertop and full-sized convection ovens are excellent for reheating food. While not as quick as a microwave, a convection oven will give leftovers more flavor and texture.
But there’s a lot more to learn about utilizing convection to reheat food.

When should you not reheat food in a convection oven?
Baked items, roasted vegetables, and egg dishes should not be reheated in a convection oven since they have a delicate texture or are quickly dried up. They can become harsh and chewy if the fan moving the air removes too much moisture from them.
Convection ovens are great for roasting meats and vegetables, baking pies and pastries, and baking anything else that has to be covered.
Since moisture loss is not a concern, hearty dishes like covered casseroles and braised chicken work well. During convection cooking, they’ll retain their moisture and cook more quickly. However, the hot air recirculation fan may cause things to dry out too soon.
